Muffins with cocoa and mint

Muffins with cocoa and mint combine rich chocolate flavors with a refreshing hint of mint. Here’s a recipe that balances both perfectly:

Cocoa Mint Muffins

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup milk (or any milk substitute)
  • 1/4 cup vegetable oil (or melted coconut oil)
  • 1 large egg
  • 1/2 cup plain Greek yogurt or sour cream
  • 1 tsp vanilla extract
  • 1/2 tsp peppermint extract (adjust to taste)
  • 1/4 cup mini chocolate chips (optional, for extra chocolatey goodness)

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.

  2. In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.

  3. In another bowl, mix the milk, vegetable oil, egg, Greek yogurt (or sour cream), vanilla extract, and peppermint extract until well combined.

  4. Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix. Fold in the mini chocolate chips if using.

  5. Divide the batter evenly among the muffin cups, filling each about 2/3 full.

  6. Bake for 18-22 minutes or until a toothpick inserted into the center of a muffin comes out clean.

  7. Cool the muffins in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

The mint flavor adds a fresh twist to the rich cocoa, creating a delightful combination. These muffins are perfect for a special treat or to add a bit of excitement to your regular muffin routine!
